Hydroponically grown Bibb lettuce is known for its soft, rounded heads and naturally cupped leaves that almost look designed for plating. Because it’s grown in a controlled water system rather than soil, the leaves come in clean, consistent, and tender with very little waste. Flavor is mild and slightly sweet with a delicate butteriness that gives Bibb lettuce its reputation, which is why it’s often referred to as butter lettuce. The inner leaves are especially tender and sweet, giving the head a soft, balanced texture throughout. Because the leaves bruise easily, Bibb is often better torn than cut to help preserve its shape and delicate structure.
